The right choice of products
Without fresh and high-quality ingredients, you will not be able to knead a good dough, which means baking will be unsuccessful. Therefore, their choice is particularly careful. Pay special attention to the quality of yeast: they should smell good and not be too dark in color. Also purchase quality flour: it must be of the highest grade and contain at least 24% gluten.
The dough recipe for baking involves the use of the following ingredients:
- flour - 500 g;
- butter - 75 g;
- milk - 1 cup;
- dry yeast - 10 g;
- eggs - 2 pcs .;
- sugar - 1.5 tbsp. l .;
- salt - 1 tsp;
- Vanillin - 1 bag.
Before you start kneading the dough, you must remove all these products from the refrigerator and leave them on the table for a while so that they warm up to room temperature.
Milk is heated to 35 degrees before use. This must be done in order for the yeast fungus to be better distributed in it and become more active. It is best to use milk for the dough, and not kefir or water, since it improves the friability and viscosity of the dough. As a result, baking will be more airy and fragrant, and will also have a beautiful crust.
Sift the flour through a sieve, then add vanilla, salt and sugar to it. Next, dissolve the yeast in milk, add a few spoons of sugar-flour mixture and leave in a warm place for 15-20 minutes. As a result, you get a sponge. Add melted butter and egg yolks to it (baking with them will turn out to be more crumbly and soft), and leave the whites to lubricate the dough. Then enter the flour mixed with salt, sugar and vanilla. Then start kneading the dough on the table. It is important to knead his hands as actively as possible and gradually add flour. Make sure the dough is kneaded evenly. It is necessary that it acquired an elastic structure and become smooth. After that, put the dough in a bowl, cover it with a napkin and leave it in a warm place for 1-1.5 hours so that it can rise. Then, based on it, you can make baking.
